Czech Potato Salad

This simple and easy salad came to us via our Kitchen Coordinator Tanya James. Her roots are solidly Czech and thanks go to her Mom who came to the Test Kitchen today to lead the group.


8 med potatoes boiled in their skins
4 hard cooked eggs
2 small carrots
2 dill pickles
6 tbsp chopped parsley
2 celery stalks, chopped
salt and pepper
                 
Dressing
2/3 c mayonnaise
2 tsp Dijon mustard
juice of 1 lemon, or to taste

Boil potatoes until tender then let cool.
When cool enough to handle peel skins off.
While cooking potatoes hard cook eggs and steam carrots until tender. Finely chop vegetables, pickles, eggs and parsley.
Whisk together dressing and pour over potatoes.
Add remaining ingredients and place in fridge until cool.
