Fish Tacos

Fish TacosA fabulous way to put more fish in your diet!!

Spice Rub
2 Tbsp paprika
1 Tbsp hot smoked paprika
1 Tbsp garlic powder
1 Tbsp dried oregano
1 Tbsp dried thyme
1 Tbsp cayenne pepper
2 Tbsp brown sugar
1 tsp ground black pepper
Mix well and store in sealed container.

White fleshed fish fillets such as haddock or basa
Vegetable oil
Shredded carrot
Shredded cucumber
Chopped green onion
Soft flour or corn tortillas
Cilantro dressing*
Guacamole*
Pickled red onions*
Salsa fresca*

Cilantro dressing*
1/2 cup yogurt
1/2 cup mayonaise
1 tsp minced garlic
1 Tbsp srirachi hot sauce
1/4 tsp pepper
bunch of cilantro, finely chop half for sauce use the rest as garnish for taco
Mix all ingredients together and set aside.

Guacamole*
2 ripe avocadoes, scooped
½ tsp salt
1 tsp minced garlic
1 Tbsp lime juice
1 medium tomato, chopped
¼ cup finely chopped red onion
Pinch ground cumin
Place avocado in a large bowl and chop with a pastry cutter or a fork.
Add remaining ingredients and mix gently.
Taste for seasoning and cover closely with plastic.
Chill a few minutes before serving.

Pickled Red Onions*
1 Tbsp coarse salt
2 medium red onions, peeled and thinly sliced
1 tsp whole black peppercorns
1 tsp dried oregano
½ tsp ground cumin
1 tsp minced garlic
1 ½ cups red wine vinegar
2 Tbsp olive oil
Combine all the ingredients in a small pot and bring to a boil.
Remove from heat and allow to come to room temperature.

Salsa Fresca*
4 medium tomatoes, chopped
1/4 cup finely chopped red onion
1 Tbsp chopped green chilies ( canned )
1 tsp minced garlic
1 tsp salt
2 tsp sugar
½ cup finely chopped sweet red pepper
¼ cup water
2 Tbsp lime juice
3 Tbsp chopped cilantro
Combine all the ingredients and check for seasoning.
Chill a few minutes before serving.

 

Rinse and pat dry fish, coat both sides with rub- the more you use, the spicier it will be.
Pan fry fish in 2 tablespoons of canola oil over medium heat.( 6-7 min for large fillets) , Don't over cook
When fish is done, rest for two minutes then break into chunks.

Warm the tortillas, one at a time in a hot dry frying pan.
Top each tortilla with a piece of fish, some vegetable garnishes, dressing, guacamole, pickled red onions and salsa.
