Niter kibbeh, is a seasoned, clarified butter used in Ethiopian cooking. It is simmered with spices such as fenugreek, cumin, coriander, turmeric, cardamom, cinnamon, or nutmeg before straining. This butter will keep a long time in the freezer and can be used in small amounts to flavour any savoury dish
1lb unsalted butter
1 onion, chopped
1 Tbsp minced garlic
1 Tbsp minced ginger
1 tsp turmeric
1 tsp cardamom seeds
1 cinnamon stick
2 whole cloves
1/4 tsp fenugreek seeds
In a small pan slowly melt the butter.
Increase the heat and boil until the top is covered with foam.
Add all the remaining ingredients.
Lower the heat and simmer uncovered at least 45 minutes.
Pour the clear liquid into a container and discard the remaining solids, (or nibble on them, they're delicious!)
