Pineapple Coleslaw

This delicious sweet and sour coleslaw delighted the "Dad's and Kid's in the Kitchen" program, the "Young at Heart" program and is slated for tomorow's "Community Garden Group". A real winner!!

Serves 6-8

3 cups white cabbage, finely shredded

1 cup red cabbage, finely shredded

3/4 cup white vinegar

1/2 cup sugar

2 tsp minced garlic

1/4 cup chopped fresh mint

2 Tbsp finely chopped green onion

Salt and pepper

1 tsp ground ginger

½ cup lime juice

½ cup mayo

1 cup crushed pineapple

 

Mix cabbages together.

Combine vinegar, sugar, garlic, mint, green onion, salt, pepper, ginger and lime juice.

Pour over cabbage.

Add mayo and pineapple.

Mix very thoroughly.

Check for seasoning and serve.
