Roasted Peaches with Yogurt, Honey and Mint
This amazing and super easy dessert was first made during our Wednesday drop-in kitchen program called The Test Kitchen. Peaches are still available...give it a try!!
Peaches (1 per person), slightly ripe yet firm, halved and pitted
Fresh mint leaves, shredded
2 cups yogurt (for approximately 10 peaches)
Make thickened yogurt by straining yogurt through cheese cloth or strainer for 2 hours. Add a tsp of vanilla extract if desired.
Preheat oven to 400°F.
Place peaches cut side up on a parchment paper lined baking sheet.
Brush them with oil.
Sprinkle brown sugar and a little allspice over the peaches.
Roast in oven for 20 minutes or until peach is bubbling and easily pierced with a butter knife.
Serve two peach halves per plate. Spoon a heaping tablespoon of yogurt into the middle of each peach. Drizzle peaches with a little honey. Garnish with mint and serve.
Serve warm or at room temperature.
