"Sweet Thing" Granola Bars

Adapted from “how to feed a family” by Laura Keogh & Ceri Marsh

Our Good Food For a Healthy Baby program thought these were an easy, sweet treat. Healthy too!

1/2 cup packed brown sugar
1 1/2 cup rolled oats
1/3 cup oat flour (grind oats in a food proces¬sor until fine)
1/4 cup flax meal
1/2 cup dried apricots, finely chopped
1/2 cup dried cranberries, chopped
1/3 cup pecans, coarsely chopped 
2 Tbsp nut butter (peanut or almond)
1/4 cup maple syrup
1/4 sunflower oil

Preheat oven to 350 degrees and line a 9 x 11 inch baking pan with parchment paper.
Mix together sugar, oats, oat flour, flax, apricots, cranberries, and pecans.
In a separate bowl mix together nut butter, maple syrup and oil.
Pour dry ingredients on top of wet and stir until combined.
Dump the mixture into the prepared baking dish and spread evenly.
Bake for 30-40 minutes. 
Remove from oven when it just starts to brown.
Let bars cool for 10 minutes in the pan.
Lift out and let cool before slicing.
