Velvety Chocolate *Secret Ingredient* Brownies
Coral used these brownies in a “guess the secret ingredient activity” with the children in the Sprouting Chefs program. The recipe excluded the beet ingredient and instead had “ ½ cup secret ingredient” listed. Needless to say the kids were shocked and delighted at the resulting delicious treat.
3 squares unsweetened baker’s chocolate
½ cup unsalted butter
½ cup whole wheat flour
¼ tsp salt
½ tsp baking powder
¾ cup sugar
1 tsp vanilla extract
*½ cup pureed, cooked beets
2 large eggs
Preheat oven to 325 degrees.
Melt chocolate and butter over a double boiler, stirring often.
Prepare a nine inch square baking pan with oil, butter or lined with parchment paper.
Meanwhile in a small bowl, combine flour with salt and baking powder.
Once chocolate has melted stir in sugar until evenly mixed, then add vanilla, beet puree and eggs.
When well mixed, fold wet ingredients into flour mixture and scrape batter into the prepared pan.
Bake for 35 minutes, cool and eat!
