This inexpensive, delicious recipe improves with a little age. Make it one day and enjoy it for the following 2-3 days. Serves 8-10
½ cup cider vinegar
¼ cup sugar
¼ cup vegetable oil
1 tsp minced garlic
2 Tbsp minced fresh dill
1 tsp dry mustard
Salt and pepper
8 cups shredded red and green cabbage
2 cups shredded rutabaga
1 cup very thinly sliced red onion
4 cups shredded cucumber, squeezed dry
Combine all the dressing ingredients.
Add to slaw ingredients and mix very thoroughly.
Taste for seasoning and chill at least a few minutes before serving.
