Za'atar Turkey Burgers with Minted Yogurt

2.5 lbs lean ground turkey
1 small onion, finely minced
2 tsp minced garlic
¼ cup chopped parsley
2 Tbsp minced green onion
2 eggs
1/3 cup bread crumbs
Salt and pepper
2 tbsp za’atar (Middle Eastern spice mix)
2 cups Balkan-style yogurt, strained for 1.5 hours
¼ cup finely chopped fresh mint
Juice and zest of ½ lemon

Toppings
greens, sprouts, tomato, avocado, shredded carrot or beet. Be creative!

In a large mixing bowl, combine turkey, onion, garlic, parsley, green onions, eggs, bread crumbs and za’atar.
Season well with salt and pepper.
Using your hands, mix well to thoroughly combine ingredients, adding more breadcrumbs if necessary.
Form mixture into patties.
Preheat grill pan to high. Grill burgers 1 to 2 minutes per side, or until grill marks appear. Bake in oven to finish cooking at 400F.
In a small mixing bowl, combine strained yogurt, mint and lemon juice. Season with salt and pepper and stir well.

Tip
To strain yogurt: Line a bowl with a piece of cheesecloth. Pour the yogurt into the cheesecloth-lined bowl and gather up all four corners of the cloth. Hang the yogurt of the faucet of your sink for two hours, or even overnight for a very rich yogurt cheese. For a quicker version, place a fine mesh sieve of the rim of the mixing bowl and pour yogurt into sieve. Allow to sit for at least one hour before using.
