Kale Waldorf Salad

Serves 4-6

This salad received a big thumbs-up from “The Test Kitchen” cooking group and guests! 
We adapted this recipe from www.wholefoodsmarket.com/recipe/kale-waldorf-salad

4 cups packed, stemmed and finely chopped kale
1 Tbsp sunflower oil
1 large apple, chopped
1 cup thinly sliced celery
1/2 cup toasted walnuts, chopped
1/4 cup raisins

2 Tbsp Dijon mustard
1 Tbsp red wine vinegar
1/8 tsp sea salt
1/4 cup sunflower oil

Place kale in a large bowl.
Add 1Tbsp sunflower oil and “massage” into kale.
Add apples, celery, walnuts and raisins.
To make dressing, whisk together mustard, vinegar, salt and oil.
Pour over salad, mix thoroughly.
Refrigerate 10-30 minutes before serving.
