"Powerz Out" Chickpea Salad

This very flavourful salad is a creation of our Kitchen Coordinator Rosie. She brought it to the "Young at Heart" cooking group a few weeks back and it was heartily praised by all!! It has been added to the roster for Community Meals.

serves 6

2 cans of chickpeas, drained and rinsed

1 small jar of green olives (no pits) drained and halved

1 small red onion, finely chopped

1 clove garlic finely chopped

1 small jar roasted red peppers in oil, coarsely chopped with oil

1 small jar sundried tomatoes in oil, coarsely chopped with oil

1 tsp dried oregano

1 tsp paprika

2 Tbsp chopped fresh basil or tsp dried

2 Tbsp chopped fresh mint or 1 tsp dried

1 Tbsp red wine vinegar


Extra oil and vinegar to taste if needed.

Add all ingredients to a bowl and allow to marinate at least 1 hour.

Feel free to add any other vegetables from your fridge!
